Moduline: Cook And Hold Smoker Ovens

Cook, smoke, hold, with just one unit. Hot or cold, a unique aroma. The new and advanced professional instruments from Moduline make hot or cold smoking possible, even joining the benefits and the quality of low-temperature cooking ovens.

To complete their Cook&Hold range, Moduline designed their Smoker Ovens: a line of low-temperature ovens that come with an external electric smoker allowing you to infuse your food with the robust taste of smoking.

"Via the Touch screen, smoking can be programmed to 3 levels: soft, medium and hard"

While smoking is particularly suitable for cooking meat, it can also be performed at room temperature to sliced meats, fresh dairy products, vegetables, raw meat, etc.

Through use of the Touch controls, options such as to smoke without cooking, or even the ability to combine room temperature smoking with hot smoking during the cooking process while also controlling the smoking temperature and time at a touch.


Moduline Smoker Ovens Cook & Hold

Advantages of Moduline Smoker Ovens

The robust flavour of smoking, both hot and at room temperature

  • The electric smoke generator is external and can be connected directly to the unit via the roof of the appliance.
  • The smoke enters the firing chamber via a vacuum air circuit (patented using the Venturi System).
  • The smoke is produced by burning dry wood chips and the smoke enters the chamber through the connecting duct to the generator and can therefore smoke the food regardless of whether it is being cooked or not.
  • In addition, Moduline designed the installation of the smoker box outside the cooking chamber to avoid overheating the chamber during smoking at room temperature.
  • The smoke generator is completely detachable for inspection and cleaning, which can be done in a dishwasher.
  • Smoking can be programmed to 3 levels: soft, medium and hard.
  • The Deliwarm system serves to maintain a constant temperature in the cavity during both the cooking and holding phases, thanks to the gentle heat of heating without forced ventilation.
