Why Blast Chilling? Advantages and Solutions: Food Safety and Hygiene

The usual way of holding cooked food is to let it cool down to a temperature suitable to store it in the refrigerator. However , it has been scientifically proved that bacteria present in food will grow and multiply easily and rapidly in the temperature range between +65°C and +10°C. Taking just cooked food through this "Danger Zone" quickly is the only means of preventing micro-organisms which can cause collective food poisoning from multiplying.

Only specifically designed equipment called BLAST CHILLERS / BLAST FREEZERS give the possibility of chilling food in such a fast way that bacterial growth is inhibited. Exhaustive laboratory tests have demonstrated that - if properly chilled - any type of cooked food can be safely stored in an ordinary refrigerator for up to 5/6 days or up to 20 days if vacuum-packed. Furthermore, storage period can be prolonged to a few months if food is frozen after being chilled. The Polaris range of chillers and freezers caters for soft and hard chilling and freezing.

Features

The new line comes with two different controllers called SIMPLE and TOP conceived specifically for customers who want a unit that is simple to operate but still gives them full control of the Blast Chiller ( SIMPLE ), or a controller that is still easy to use but offers additional features ( TOP ).

The SIMPLE -series controller is easy to use and serves to blast chill or freeze the product either on a time basis or by monitoring the product's core temperature by means of the needle probe. Furthermore, a heated probe is standard issue on the blast freezing version of the blast chiller. Defrosting can be started by the user only when it is actually needed, thus meeting the need for increasingly energy efficient equipment and avoiding the needless waste of energy.

Lastly, all appliances in the line come ready for application of the germicidal lamp and, when the cycle ends, the chiller automatically switches to holding mode, keeping the chilled product at a holding temperature until it is transferred to suitable refrigerators for storage.

Over 30 models of Blast Chillers and Freezers are available ranging from a 5 kg bench top model to over 600kg tunnel model for a patisserie production line.
